The view of Hawaii from the air is a spectacular one – you can see so much more than you ever would on the ground.  Many of the mountains, gorges, and volcanoes on the islands are unreachable by normal means of transport, and a Hawaii helicopter tour will let you see the true extent of the terrain.  You can hike up many of the mountain ridges, but nothing can beat the view you get several hundred feat up in the air.
